Our Everyday Heritage Wheat Bread Recipe
(Perfect for sandwiches, toast, or eating warm with butter straight from the oven)
This recipe highlights the nutty flavor and hearty texture of our freshly milled Turkey Red Wheat flour. It’s a rustic, real-food loaf with simple ingredients—and none of the preservatives or additives you'd find in store-bought bread.
Ingredients
3 cups (360g) freshly stone-milled Turkey Red Wheat flour
1 cup (120g) bread flour (optional, for a lighter crumb)
2 tsp sea salt
1 tbsp honey or maple syrup
2 tsp instant yeast
1 ¼ cups (300ml) warm water
1 tbsp olive oil or melted butter
Instructions
Mix the dough: In a large bowl, combine the warm water, yeast, and honey. Let it sit for 5–10 minutes until it begins to bubble slightly.
Add dry ingredients: Stir in the flour(s), salt, and oil. Mix until a shaggy dough forms.
Knead: Knead the dough on a lightly floured surface for 8–10 minutes, or until smooth and elastic. (Alternatively, use a stand mixer with a dough hook for about 6 minutes.)
First rise: Place dough in a lightly oiled bowl, cover with a towel or plastic wrap, and let rise in a warm spot for 1 to 1.5 hours, or until doubled in size.
Shape and second rise: Punch down the dough and shape it into a loaf. Place in a greased 9x5” loaf pan or on a baking sheet for a more rustic shape. Cover and let rise again for 30–45 minutes.
Bake: Preheat your oven to 375°F (190°C). Bake the bread for 30–35 minutes, until golden brown and it sounds hollow when tapped on the bottom.
Cool & enjoy: Let cool on a rack for at least 20 minutes before slicing—if you can wait that long!
