Turkey Red Wheat: A Heritage Grain with Deep Roots
Our whole grain Turkey Red wheat flour delivers a rich, full-bodied flavor that makes everything from sourdough loaves to simple pancakes unforgettable. But it’s more than just delicious—it’s a piece of history.
Turkey Red wheat was first brought to central Kansas by Mennonite immigrants in 1874, and quickly became the dominant wheat variety across Kansas and Oklahoma. Known for its adaptability, robust flavor, and excellent baking properties, Turkey Red laid the foundation for the modern wheats we use today. We’re honored to help keep this heritage grain alive—freshly milled and full of life—on our own regenerative fields at Willow Creek Farms.
Big Country Hard White Wheat: Oklahoma’s Future in a Flour Bag
We’re just as excited to share our Big Country Hard White wheat, a standout new variety developed by Oklahoma State University. This wheat offers a lighter color and milder flavor than Turkey Red, making it perfect for sandwich loaves, tortillas, and other everyday favorites.
Grown regeneratively on our farm, Big Country is a glimpse into the future of wheat—one where flavor, nutrition, and environmental stewardship come together in every harvest.
